I love food but I'm always busy with friends, school and sport and can't really be bothered spending too much time or effort cooking. That doesn't mean that I want to settle for average food, I want to eat great tasting food that is good for me.
I wanted to have all my favourite recipes together in one place, so I set myself a goal - 'before I left home I would collect, beg, borrow all the recipes that I loved'. As I was doing this I thought that these ideas are pretty cool, so I started thinking I should put them together so you can have them too!
Most cookbooks are written for adults, they're dull and boring... so let's make this the beginning of a new era for kids or students like me - I have put these recipes together in a way that will inspire you... some of these are total classics - the things we all love, and others a bit more 'out there'.
These meals are veering towards being healthy but they're not tofu or cottage cheese. I want to look good, have clear skin, be at a healthy weight and have lots of energy. I choose foods that my body would like, so I look after myself from the inside out. I didn't want to let you down either, what can I say - I love gorgeous caramel slice so I think I am going to do a book on that sort of thing later!
If you are like me, cooking isn't second nature; unless someone shows me or tells me I don't really know what to do. I mean a recipe telling me to 'poach an egg' assumes I know what 'poach' means - other than stealing a shot off my tennis partner when we are playing doubles! So I decided that I would include the answers to questions I have had to ask - like "how much water to put in the pot? Does it matter if it is hot or cold?","Which vegetables take longer to cook in a stir fry?"
This first book is potato meals ... why potatoes??? Simple really - they taste great and are cheap, they're loaded with nutrients and you can buy them everywhere, they're good for the planet and I know you will like them. Besides, I had to start somewhere.
Whilst all these recipes have potatoes in them, I have included different types of meals. There is lots of variety with lots of other foods. I've covered meals from awesome filled baked potatoes, scrumptious soup, to-die-for wedges, and the best warm salad you can imagine.
I discovered that it's easy to get overwhelmed with choice. If you do a Google for a recipe you end up getting 3 million choices, if you are like me you'd probably give up and cook what you always cook - but that's frustrating. Some recipe books are just as bad - do you really want to know 1001 salads??? I think it's far better to get GREAT ideas from someone you trust and go for it. I'm your girl!
